Keeping it Simple

Life can be very unpredictable and sometimes I never know what a week might hold!  I want to be ready for anything and I sure don’t want to miss any fun!  At the beginning of each week I try to make up a salad and a soup from our favorites file.  This way if I get a chance to spend time with my grandchildren, and I’m too pooped at the end of the day, I have something to fall back on.  if someone drops by, I can come up with a delicious lunch that is already prepared, you get the idea… One of our favorites is this Chicken Salad.  Maybe it will become one of yours too!

Chicken Salad

4 cups cubed chicken (I tear mine)

1 1/2 cups papaya or seedless green grapes (I use grapes, sometimes red)

1 cup toasted pecan pieces

1/2 cup low-fat mayonnaise (I don’t use low-fat)

1/2 cup vanilla yogurt

2 tablespoons honey

1 teaspoon poppy seeds (I don’t always use these)

1 tablespoon fresh lime juice

Combine first three ingredients in bowl.  Combine mayonnaise and next four ingredients.  Add to chicken mixture.  Stir gently to blend.  Chill
